A flavorful Greek chicken bowl filled with marinated grilled chicken, fresh veggies, and tzatziki sauce, perfect for a healthy meal.

  • 2 boneless, skinless chicken breasts
  • 1 cup Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano

  • Pepper, to taste
  • 1 cup chopped vegetables (cucumbers, cherry tomatoes, red onion, bell peppers)
  • 1/2 cup crumbled feta cheese
  • 1 cup tzatziki sauce

Instructions

  1. Marinate the Chicken: In a bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Coat the chicken and refrigerate for at least 30 minutes.
  2. Cook the Chicken: Preheat the grill over medium-high heat and grill the chicken for about 6-7 minutes on each side until cooked through. Let rest for 5 minutes before slicing.
  3. Prepare the Tzatziki: In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt. Adjust seasoning to taste.
  4. Chop Your Veggies: Dice the vegetables and toss them with olive oil, lemon juice, and seasoning.
  5. Assemble Your Bowls: Layer sliced chicken, tzatziki, and veggies in a bowl. Top with crumbled feta and garnish with fresh herbs if desired.
