Greek Chicken Casserole

A hearty and flavorful Greek Chicken Casserole that combines juicy chicken, fresh vegetables, and tangy feta cheese for a comforting meal.

  • 2 lbs boneless skinless chicken breast, cubed
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced Kalamata olives
  • 1 cup crumbled feta cheese
  • 1 cup cooked brown rice
  • 2 tbsp olive oil
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken: In a large skillet, add the olive oil and let it warm up. Toss in the cubed chicken, season with salt and pepper, and cook for about 5-7 minutes until it’s no longer pink on the outside.
  3. Add the vegetables: When the chicken is nicely seared, add the diced zucchini, halved cherry tomatoes, and sliced Kalamata olives to the skillet. Cook for another 4-5 minutes.
  4. Combine everything: In a large mixing bowl, combine the cooked chicken mixture with feta cheese and cooked brown rice. Drizzle in olive oil and sprinkle with oregano.
  5. Transfer to a baking dish and spread evenly.
  6. Bake for about 25-30 minutes until golden-brown.
  7. Let it rest for 5 minutes before serving.

Notes

Serve garnished with fresh parsley or additional feta. Pairs well with a side salad or crusty bread.
