  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour

  • Zest of 1 lemon (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the Oven: Set that oven to 350°F (175°C).
  2. Prepare the Pan: Grease and flour a 9-inch round cake pan, or line it with parchment paper.
  3. Mix the Wet Ingredients: In a large bowl, combine the Greek yogurt, sugar, and vegetable oil, blending until smooth. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. Add the Zest: Fold in the lemon zest, if using.
  5. Combine the Dry Ingredients: Whisk together the flour, baking powder, and salt in another bowl.
  6. Fold It Together: Gradually add the dry ingredients to the wet mixture, gently folding to retain air.
  7. Pour into the Pan: Pour the batter into your prepared pan.
  8. Bake: Let it bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool Down: Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack.
  10. Dust It Off: Optionally, dust the top with powdered sugar before serving.
