Ground Beef and Potatoes One-Pan Dinner

A comforting one-pan dinner featuring savory ground beef, tender potatoes, and a medley of spices, perfect for busy weeknights.

Ingredients

  • Ground Beef (1 lb)
  • Potatoes (4 medium, chopped)
  • Onion (1 large, diced)
  • Bell Peppers (1-2, any color, diced)
  • Garlic (3 cloves, minced)
  • Beef Broth (1 cup)
  • Olive Oil (2 tbsp)
  • Paprika (1 tsp)
  • Italian Seasoning (1 tsp)
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C). Chop your potatoes and toss them in olive oil, salt, and pepper, and set aside.
  2. Heat 1 tablespoon of olive oil in a skillet, then sauté the diced onion and garlic until fragrant. Add the ground beef and cook until browned.
  3. Add bell peppers and sauté for another 3-4 minutes. Sprinkle in paprika, Italian seasoning, and more salt and pepper.
  4. Add the chopped potatoes to the skillet and mix well. Pour beef broth over the top.
  5. Cover the skillet and bake in the oven for 30-35 minutes. Remove the cover and bake for an additional 10-15 minutes until golden brown.
  6. Let sit for 5 minutes before serving.

Notes

Garnish with chopped fresh parsley or chives for extra flavor. Pair with a salad or crusty bread.
