A vibrant and flavorful salad that combines juicy chicken with creamy guacamole, fresh vegetables, and zesty lime for a refreshing meal.

  • 2 cups Cooked Chicken Breast, shredded
  • 2 Ripe Avocados, mashed
  • 2 tablespoons Lime Juice, freshly squeezed
  • 1 cup Cherry Tomatoes, halved
  • 1/4 cup Red Onion, diced
  • 1/4 cup Cilantro, chopped
  • Salt and Pepper, to taste
  • 1/2 cup Greek Yogurt or Sour Cream (optional)

Instructions

  1. Gather your ingredients.
  2. Prepare the chicken by shredding or cooking.
  3. Mash the avocados in a bowl.
  4. Add lime juice and mix.
  5. Incorporate the shredded chicken into the avocado mixture.
  6. Toss in the halved cherry tomatoes, diced red onion, and chopped cilantro.
  7. Season with salt and pepper to taste.
  8. Chill in the fridge for 30 minutes (optional).
  9. Serve in lettuce cups or on a bed of greens.

Notes

For a vegetarian version, substitute chicken with canned chickpeas. You can also customize with various vegetables or herbs.
