  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ½ cup coconut oil (melted) or unsalted butter
  • ½ cup maple syrup or honey
  • ½ cup applesauce
  • 1 cup diced apples (fresh or shredded)
  • ½ cup walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prep your baking sheets by lining with parchment paper or silicone mats.
  3. Mix the dry ingredients in a large bowl: rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Cream the wet ingredients in another bowl: melted coconut oil, maple syrup, and applesauce until smooth.
  5. Combine the wet and dry ingredients until just mixed. Add in the diced apples if desired.
  6. Fold in the diced apples and nuts, if using.
  7. Scoop heaping tablespoons of dough onto prepared baking sheets, leaving space between for spreading.
  8. Bake for 12-15 minutes or until edges are golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Serve warm, optionally sprinkling with additional cinnamon or drizzling with honey.

Notes

These cookies can be customized with various add-ins such as chocolate chips, pumpkin puree, or dried fruits. Store in an airtight container at room temperature for up to a week.
