A creamy and vibrant avocado chicken salad packed with protein and healthy fats, perfect for lunch or dinner.

Ingredients

  • 1 ripe avocado
  • 1/2 cup celery, chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Optional: 1/4 cup Greek yogurt or mayonnaise

Instructions

  1. Gather your ingredients.
  2. Prepare the chicken by shredding or cooking it until done.
  3. Chop the celery and red onion finely.
  4. Mash the avocado in a large bowl.
  5. Mix in the lime juice to prevent browning.
  6. Combine everything together in the bowl.
