Healthy Carrot Cake Oatmeal Cookies

  • 1 cup Whole Wheat Flour
  • 1 cup Grated Carrots
  • 1/2 cup Brown Sugar
  • 1/4 cup Maple Syrup
  • 1 tsp Cinnamon
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Chopped Walnuts (optional)
  • 1/2 cup Raisins or Chocolate Chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, whole wheat flour, baking soda, cinnamon, and salt in a large mixing bowl.
  3. Mix the grated carrots, brown sugar, maple syrup, and a splash of vanilla extract in a separate bowl until smooth.
  4. Add the wet mixture to the dry ingredients and mix gently until just combined.
  5. Fold in the chopped walnuts and raisins or chocolate chips.
  6. Drop spoonfuls of the dough onto a lined baking sheet, leaving space in between.
  7. Bake for 10-12 minutes, or until lightly golden at the edges.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies can be customized with various mix-ins or topped with cream cheese icing for extra sweetness.
