Healthy Carrot Cake Oatmeal Cookies

Delicious and wholesome carrot cake oatmeal cookies that are both nutritious and easy to make.

Ingredients

  • 1 ½ cups Old-Fashioned Rolled Oats
  • 1 cup Grated Carrots
  • 1 cup Whole Wheat Flour
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • ½ cup Maple Syrup or Honey
  • ½ cup Chopped Walnuts or Pecans
  • ½ cup Raisins or Cranberries
  • 1 Egg or Flax Egg
  • ½ cup Coconut Oil or Unsalted Butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together your rolled oats, flour, baking powder, cinnamon, and nutmeg in a large bowl.
  3. Grate about 1 ½ cups of fresh carrots into a separate bowl.
  4. Combine melted coconut oil, maple syrup (or honey), and the egg (or flax egg) in another bowl and whisk until smooth.
  5. Pour the wet mixture into the dry ingredients and gently fold in the carrots, nuts, and raisins until just combined.
  6. Scoop dollops of cookie dough onto a lined baking sheet about two inches apart.
  7. Bake for 10–12 minutes or until golden brown around the edges.
  8. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Feel free to add a cream cheese drizzle for extra indulgence! Store cookies in an airtight container for freshness.
