Healthy Garlic Parmesan Chicken Pasta

  • 8 ounces Whole Wheat Pasta
  • 2 Boneless, Skinless Chicken Breasts
  • 3 tablespoons Olive Oil
  • 4 cloves Fresh Garlic, minced
  • 1 cup Low-Sodium Chicken Broth
  • 2 cups Fresh Spinach
  • 1/2 cup Grated Parmesan Cheese
  • 1/4 teaspoon Red Pepper Flakes (optional)

Instructions

  1. Cook the pasta by bringing a large pot of salted water to boil. Add the whole wheat pasta and cook according to package directions until al dente, usually about 8-10 minutes. Save about a cup of pasta water before draining.
  2. Prepare the chicken by heating 2 tablespoons of olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper and sear for about 5-7 minutes per side until golden brown.
  3. Add the garlic to the skillet after removing the chicken, sauté for about 1 minute until fragrant.
  4. Mix in the low-sodium chicken broth, scraping up any brown bits, then add the fresh spinach and stir until wilted (about 2-3 minutes).
  5. Combine the chopped cooked chicken back into the skillet with the drained pasta. Toss everything together and add some reserved pasta water as needed for sauce consistency.
  6. Finish by stirring in the grated Parmesan cheese until melted and creamy. Season with salt, pepper, and red pepper flakes if desired.

Notes

For a vegetarian option, substitute chicken with chickpeas or mushrooms. Feel free to add vegetables like bell peppers or zucchini for extra nutrition.
