Healthy Raspberry Oatmeal Cookies

Delicious and guilt-free healthy raspberry oatmeal cookies made with wholesome ingredients.

  • 2 cups Rolled Oats
  • ½ cup Whole Wheat Flour
  • 1 cup Fresh Raspberries
  • ½ cup Maple Syrup
  • ⅓ cup Coconut Oil
  • 1 large Egg
  • ½ teaspoon Baking Soda
  • a pinch of Salt
  • 1 teaspoon Vanilla Extract
  • ½ cup Chopped Nuts or Seeds (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the baking sheet by lining it with parchment paper.
  3. Mix dry ingredients in a large bowl: rolled oats, whole wheat flour, baking soda, and salt.
  4. Combine wet ingredients in another bowl: melted coconut oil, maple syrup, egg, and vanilla extract.
  5. Mix the wet mixture into the dry ingredients until just combined.
  6. Fold in the fresh raspberries and optional nuts or seeds.
  7. Scoop tablespoon-sized dough onto the prepared baking sheet, leaving space between each.
  8. Bake for 12-15 minutes until golden at the edges and soft in the center.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies can be made vegan by using a flax egg. Store in an airtight container for up to a week or freeze for up to three months.
