Healthy Street Corn Salad with Greek Yogurt

A vibrant and flavorful twist on classic street corn, this salad features sweet corn, tangy Greek yogurt, and refreshing lime, perfect for summer gatherings.

  • 4 ears fresh corn or 3 cups frozen corn
  • 1 cup Greek yogurt
  • 12 tablespoons lime juice
  • ½ cup feta cheese, crumbled
  • ¼ cup red onion, finely chopped
  • ¼ cup cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the corn by grilling or boiling it until tender.
  2. Cool the corn until manageable, then cut the kernels off the cob.
  3. Mix the dressing with Greek yogurt, lime juice, and chili powder.
  4. Add the corn, feta, red onion, and cilantro to the dressing and fold gently.
  5. Season with salt and pepper to taste.
  6. Chill the salad in the refrigerator for at least 30 minutes.
