Healthy Sweet Potato Hash Browns

A delicious and nutritious twist on traditional hash browns using sweet potatoes that are naturally sweet and packed with nutrients.

Ingredients

  • 2 medium Sweet Potatoes
  • 1 small Onion
  • 2 cloves Garlic, minced
  • 2 large Eggs
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • 1 teaspoon Paprika

Instructions

  1. Prep the sweet potatoes by peeling and grating them. Squeeze out excess moisture using a towel.
  2. Sauté onions and garlic in a skillet until softened and fragrant.
  3. Mix the grated sweet potatoes, sautéed onions, garlic, eggs, salt, pepper, and paprika in a bowl.
  4. Cook the mixture in the skillet until golden brown and crispy on both sides.
  5. Keep warm in the oven if making multiple batches.
  6. Serve immediately with your favorite toppings.

Notes

For a vegan option, substitute eggs with flax eggs.
