Healthy Sweet Potato Hash Browns

Crispy and nutritious sweet potato hash browns, perfect for any meal of the day.

Ingredients

  • 2 large Sweet Potatoes
  • 1 medium Onion
  • 2 cloves Garlic, minced
  • 1 large Egg
  • 3 tablespoons Olive Oil
  • Salt & Pepper, to taste
  • Fresh Herbs (optional)

Instructions

  1. Prep Your Ingredients: Peel and shred the sweet potatoes, then squeeze out excess moisture.
  2. Chop and mince your onion and garlic.
  3. Combine in a Bowl: Mix sweet potatoes, onion, garlic, and egg, seasoning with salt and pepper.
  4. Heat the Oil: Add olive oil to a skillet over medium heat and test with the potato mixture.
  5. Form and Fry: Scoop and flatten the mixture in the skillet, leaving space between each.
  6. Flip and Cook: Cook each side for 4–5 minutes until golden brown.
  7. Drain on Paper Towels: Let excess oil soak away on paper towels.
  8. Garnish and Serve: Sprinkle with fresh herbs and add toppings like Greek yogurt if desired.

Notes

These hash browns can also be baked for a healthier option. Serve them fresh for the best texture.
