  • 2 cups Biscoff Cookies, crushed
  • 1 cup Cream Cheese, room temperature
  • 1/2 cup Granulated Sugar
  • 1/2 cup Sour Cream
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Butter, melted
  • 1 cup Powdered Sugar
  • Optional Toppings: Whipped cream, Biscoff crumbs, caramel drizzle

Instructions

  1. Prepare your pan: Grease a 9-inch springform pan with cooking spray or butter.
  2. Crush the Biscoff cookies into fine crumbs.
  3. Make the crust: Combine cookie crumbs and melted butter; press into the bottom of the pan.
  4. Beat the cream cheese until smooth.
  5. Add sugar and sour cream; mix until incorporated.
  6. Flavor it up with vanilla extract.
  7. Bake the cheesecake in a preheated oven at 325°F (160°C) for 50-60 minutes.
  8. Cool at room temperature, then chill in the fridge for at least 4 hours.
