Herby Avocado Egg Salad

A quick and delicious Herby Avocado Egg Salad, perfect for a satisfying lunch packed with flavor and nutrition.

Ingredients

  • 4 Large Eggs
  • 1 Ripe Avocado
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Dijon Mustard
  • Fresh Herbs (Chives, Dill, and Parsley) – about 2 tablespoons total
  • Salt & Pepper to taste
  • Juice of ½ Lemon

Instructions

  1. Boil the Eggs
  2. Add the eggs to boiling water
  3. Boil for 9-12 minutes, then cool in an ice bath
  4. Prep the Avocado
  5. Cut and scoop the avocado into a bowl
  6. Mash the avocado until smooth
  7. Mix It Up!
  8. Combine the avocados, mayonnaise, mustard, and lemon juice
  9. Season with salt and pepper, then fold in chopped herbs
  10. Peel and Chop the Eggs
  11. Chop the eggs and add to the avocado mixture
  12. Final Mix everything gently

Notes

Serve on toast, with crunchy veggies, or in a wrap. This salad can also be customized with various herbs and spices.
