Fluffy Protein Blueberry Pancakes

A delightful twist on classic pancakes, packed with protein and bursting with juicy blueberries, perfect for a wholesome breakfast.

  • 1 cup Greek yogurt
  • 1 cup fresh or frozen blueberries
  • 1 cup oats
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Gather all your ingredients and a medium mixing bowl. Preheat your skillet on medium heat.
  2. In that mixing bowl, add the Greek yogurt, eggs, vanilla extract, and milk. Whisk until smooth.
  3. Add the oats, baking powder, and a pinch of salt. Fold until no dry ingredients are visible.
  4. Incorporate the blueberries gently into the batter.
  5. Drop about 1/4 cup of batter onto your preheated skillet for each pancake. Cook until bubbles form, then flip and cook until golden brown.
  6. Serve on a warm plate, keeping them warm in a preheated oven while cooking the rest.

Notes

Drizzle with maple syrup or honey, and add fresh berries or Greek yogurt for extra flavor.
