Ingredients

  • Chicken thighs/drumsticks (about 2 pounds)
  • Honey (1/2 cup)
  • BBQ sauce (1 cup)
  • Garlic powder (1 teaspoon)
  • Paprika (1 teaspoon)
  • Baby potatoes (2 pounds, halved)
  • Olive oil (1/4 cup)
  • Parmesan cheese (1/2 cup, finely grated)
  • Garlic (4 cloves, minced)
  • Herbs (thyme or parsley, chopped, 1 tablespoon)

Instructions

  1. Marinate the chicken: In a bowl, combine honey, BBQ sauce, garlic powder, and paprika. Mix well. Add the chicken and let it marinate for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. Prepare the potatoes: Toss the halved baby potatoes with olive oil, minced garlic, and half the Parmesan cheese in a large bowl.
  4. Arrange the potatoes on a lined baking sheet in a single layer, cut side down.
  5. Bake the potatoes for about 25 minutes, then sprinkle with remaining Parmesan and roast for an additional 10-15 minutes.
  6. Bake the chicken on a separate baking sheet for about 25-35 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let both the chicken and potatoes rest for about 5 minutes before serving.

Notes

Marinate the chicken overnight for deeper flavor. Experiment with different herbs for the potatoes.
