  • Honey
  • BBQ sauce
  • Garlic powder

  • Baby potatoes
  • Olive oil

Instructions

  1. Marinate the Chicken: In a large bowl, combine honey, BBQ sauce, garlic powder, salt, and pepper. Add the chicken thighs and toss to coat. Let it marinate for at least 30 minutes.
  2. Preheat the Grill: Preheat your grill to medium-high heat (about 350°F).
  3. Grill the Chicken: Once the grill is hot, add the marinated chicken. Cook for 6-7 minutes on one side. Flip and cook for another 6-7 minutes until the internal temperature reaches 165°F, basting with extra BBQ sauce during the last few minutes.
  4. Rest the Chicken: Once done, remove the chicken from the grill and let it rest for at least 5 minutes.
  5. Prep the Potatoes: Preheat your oven to 400°F. Cut the baby potatoes in half and place them in a mixing bowl.
  6. Season: Drizzle olive oil over the potatoes and then sprinkle with minced garlic, parmesan cheese, herbs, salt, and pepper. Toss until evenly coated.
  7. Roast the Potatoes: Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the oven for about 25-30 minutes.
  8. Garnish: Once out of the oven, sprinkle with fresh parsley and more parmesan cheese if desired.

Notes

For an added twist, try using spicy BBQ sauce or switch out the baby potatoes for sweet potatoes. Ensure even spacing for crispy potatoes.
