Honey Oat Bread

A delightful Honey Oat Bread that’s sweet, hearty, and perfect for sandwiches or toast.

Ingredients

Scale
  • 2 cups rolled oats
  • 2 cups warm water (about 110°F/43°C)
  • 1/3 cup honey
  • 2 tablespoons olive oil (or melted coconut oil)
  • 1 ½ teaspoons salt
  • 4 cups all-purpose flour
  • 2 teaspoons active dry yeast

Instructions

  1. Prepare the yeast: In a medium bowl, combine the warm water and honey; sprinkle the yeast over the top. Set it aside for about 5-10 minutes until it becomes frothy.
  2. Mix the oats: In a separate large mixing bowl, combine the rolled oats with the salt.
  3. Combine the mixtures: Once the yeast mixture is frothy, pour it into the oats along with the olive oil.
  4. Add the flour gradually: Start adding flour, one cup at a time, mixing as you go.
  5. Knead the dough: Flour your countertop lightly and turn the dough out onto the surface. Knead for about 8-10 minutes until the dough is smooth and elastic.
  6. First rise: Grease a large bowl with a bit of oil, place your dough inside, and cover it with a damp cloth. Let it rise in a warm spot until it doubles in size—this usually takes about 1-2 hours.
  7. Shape the loaf: Once your dough has risen, punch it down to release the air. Turn it onto a lightly floured surface and shape it into a loaf.
  8. Second rise: Cover the shaped loaf with a cloth again and allow it to rise once more for about 30-60 minutes.
  9. Preheat the oven: About halfway through the second rise, preheat your oven to 350°F (176°C).
  10. Bake: When ready, pop your loaf into the oven and bake for 30-35 minutes.
  11. Cool down: Remove your freshly baked bread from the pan and allow it to cool on a wire rack.

Notes

Consider using the bread for sandwiches or as a base for French toast.
