Kielbasa Sausage Cheesy Potato Casserole

A comforting casserole filled with tender potatoes, savory kielbasa, and gooey melted cheese, perfect for family dinners and potlucks.

  • 1 pound Kielbasa sausage, sliced
  • 4 large Yukon Gold or Russet potatoes, peeled and sliced thinly
  • 1 large onion, diced
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice your potatoes thinly, about ¼ inch thick.
  3. Sauté the kielbasa slices and onion in a large skillet over medium heat until browned, about 5–7 minutes.
  4. Mix the cream of mushroom soup, sour cream, garlic powder, paprika, salt, and pepper in a large bowl.
  5. Layer the potatoes, kielbasa mixture, and cheddar cheese in a greased 9×13 baking dish.
  6. Bake covered with aluminum foil for 45 minutes to 1 hour until the potatoes are tender and cheese is bubbly.
  7. Cool for 10–15 minutes before serving.

Notes

Serve with a side salad or crusty bread. For variety, try mixing in different veggies or cheeses.
