Lemon Blueberry Muffins

These delightful Lemon Blueberry Muffins are soft, fluffy, and bursting with fresh blueberries and zesty lemon flavor. Perfect for breakfast, brunch, or a sweet snack!

  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 cup buttermilk (or milk)
  • Zest and juice of 1 large lemon
  • 1.5 cups fresh or frozen blueberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine dry ingredients: in a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Mix the wet ingredients: in a separate bowl, whisk together the melted butter and sugar, then add the egg, buttermilk, lemon juice, and lemon zest.
  4. Combine the wet and dry mixtures, folding gently until just combined.
  5. Fold in the blueberries carefully.
  6. Fill the muffin tins, filling each cup three-quarters full.
  7. Bake for about 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

Best served warm with butter or paired with tea or coffee. These muffins taste even better the next day when stored in an airtight container.
