Lemon Butter Salmon with Crispy Potatoes and Broccoli

  • 4 Salmon Fillets (skin-on)
  • 1.5 pounds Potatoes (baby Yukon Gold or red/fingerling)
  • 2 cups Fresh Broccoli
  • 4 tablespoons Butter
  • 1 large Lemon (juice and zest)
  • 4 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the potatoes by washing and cutting them into halves or quarters, then toss with olive oil, salt, and pepper.
  3. Roast the potatoes in a single layer on a baking sheet for about 20 minutes, tossing halfway through.
  4. Prep the broccoli by washing and chopping it into bite-sized florets, then set aside.
  5. Sear the salmon in a large oven-safe skillet with melted butter and minced garlic, skin-side down for 3-4 minutes.
  6. Add the broccoli to the baking sheet with the potatoes for the last 10 minutes of cooking.
  7. Finish the salmon in the oven for an additional 5-7 minutes.
  8. Make the lemon butter sauce by melting remaining butter with lemon juice and zest in a small saucepan.

Notes

For a vegan option, substitute salmon with marinated tofu or chickpeas and use vegan butter or olive oil. Adjust garlic quantity according to preference for flavor.
