Refreshing Lemon Mint Juice

A refreshing and invigorating Lemon Mint Juice, perfect for hot summer days.

Ingredients

  • 2 ½ cups water
  • ½ cup mint leaves
  • ¼ cup lemon juice
  • 1 teaspoon ginger
  • 3 tablespoons sugar
  • Salt to taste
  • Ice cubes as needed

Instructions

  1. Prepare the ingredients by gathering all you need. Zest the lemons if you like. Rinse the mint leaves and pat them dry.
  2. Make the ginger infusion by simmering ½ cup of water and adding grated ginger. Strain after 5 minutes.
  3. Combine remaining 2 cups of water, lemon juice, sugar, and ginger infusion in a blender along with mint leaves and a pinch of salt.
  4. Blend on high for about 30 seconds until well combined and mint is fine.
  5. Chill in the refrigerator for at least 1 hour or serve immediately over ice.
  6. Garnish each glass with a sprig of mint and a lemon slice.

Notes

Use fresh mint for the best flavor and feel free to adjust sweetness to your preference.
