  • 34 oz soda water (plain or lemon-flavored)
  • Ice cubes
  • Lemon zest (for optional rim)
  • Fresh thyme sprig (lightly smacked)
  • Lemon wheel or twist

Instructions

  1. Juice the lemons: Start by cutting your lemon in half. Use a citrus juicer or simply squeeze the lemon into a measuring cup until you have 1 oz of fresh lemon juice.
  2. Mix the base: In a cocktail shaker (or a mason jar), add the fresh lemon juice, coconut water, and maple syrup. Give it a good shake!
  3. Prepare your glass: Grab your favorite glass and fill it halfway with ice cubes. Rim the glass with lemon zest if desired.
  4. Combine and pour: Strain your mixture from the shaker into the ice-filled glass.
  5. Fizz it up: Top off your drink with soda water, stirring gently to combine.
