Loaded Pickle Potato Bake

A delightful dish that transforms humble potatoes into a nostalgic, comforting bake loaded with cheddar cheese and tangy pickles.

  • 4 medium potatoes, cubed
  • 1 cup pickles, chopped
  • 2 cups cheddar cheese, shredded
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt & pepper, to taste
  • Chives or green onions, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the potatoes by cleaning and chopping them into bite-sized cubes.
  3. Boil the potatoes in salted water for 15-20 minutes until fork-tender, then drain.
  4. Mix in sour cream, butter, garlic powder, salt, and pepper until combined.
  5. Incorporate chopped pickles and 1.5 cups of cheddar cheese gently.
  6. Transfer the mixture to a greased baking dish, topping with the remaining 0.5 cup of cheddar cheese.
  7. Bake for 25-30 minutes until bubbly and golden.
  8. Garnish with chives or green onions before serving.
