  • 4 large potatoes (russet or Yukon gold)
  • 1 pound ground beef or plant-based crumbles
  • 2 tablespoons olive oil
  • 2 tablespoons taco seasoning
  • 1 cup shredded cheese
  • 1 cup sour cream or Greek yogurt
  • 1 cup chopped fresh veggies (bell peppers, tomatoes, red onion, or corn)
  • Fresh cilantro (for garnish)
  • Salsa (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel (if you prefer) your potatoes. Cut them into 1-inch cubes.
  3. Toss the potatoes in a bowl with olive oil, salt, and pepper until coated.
  4. Spread the cubed potatoes on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through.
  5. Heat a skillet over medium-high heat. Add ground beef or plant-based crumbles and taco seasoning. Cook until well browned.
  6. Chop fresh veggies while the potatoes roast.
  7. Assemble the bowls with a layer of roasted potatoes, seasoned meat or crumbles, veggies, cheese, sour cream, and salsa.
