Lotus Tiramisu

A delightful twist on the classic tiramisu, featuring Lotus Biscoff cookies for a unique, crunchy texture and rich, creamy layers.

Ingredients

  • 1 cup Lotus Biscoff cookies
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 1 cup brewed coffee or espresso
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions

  1. Brew about 1 cup of strong coffee or espresso. Allow it to cool.
  2. In a large bowl, add the mascarpone cheese and heavy cream. Whip until smooth and creamy.
  3. Gradually add the sugar, mixing until the cream holds soft peaks.
  4. Mix in the vanilla extract.
  5. Dip the Lotus cookies quickly in the cooled coffee mixture.
  6. Layer dipped cookies and mascarpone mixture in a serving dish.
  7. Dust cocoa powder over the top.
  8. Chill in the refrigerator for at least 4 hours before serving.

Notes

You can add liqueurs to the coffee for extra flavor. Feel free to modify with fruit or different layers.
