Low Sugar Applesauce Oatmeal Cookies

  • 1 cup rolled oats
  • 1 cup unsweetened applesauce
  • 1/2 cup almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup honey or maple syrup
  • 1/4 cup chopped nuts (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the rolled oats, almond flour, baking soda, ground cinnamon, and salt in a large mixing bowl.
  3. Combine the applesauce, honey or maple syrup, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently.
  5. Add in the chopped nuts, folding them into the dough.
  6. Scoop rounded tablespoons of dough onto a lined baking sheet.
  7. Bake for 12-15 minutes until lightly golden.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies can be stored in an airtight container for up to a week or frozen for longer storage.
