Mac and Cheese Quesadillas

A delightful mash-up of mac and cheese and quesadillas, perfect for a quick weeknight meal or an indulgent treat.

Ingredients

  • Approximately 2 cups Mac and Cheese (homemade or store-bought)
  • 4 large Flour Tortillas
  • 1 cup Shredded Cheese (optional, such as Cheddar or Monterey Jack)
  • Butter (for frying)
  • Optional Add-ins: cooked chicken, bacon, sautéed vegetables, hot sauce, or jalapeños

Instructions

  1. Preheat a non-stick skillet over medium heat.
  2. Gather your warm mac and cheese filling.
  3. Take one tortilla and dollop about ½ cup of mac and cheese in the center.
  4. Layer any additional cheese or fillings on top of the mac and cheese.
  5. Place a second tortilla on top, pressing down to secure the filling.
  6. Add a tablespoon of butter to the skillet and allow it to melt.
  7. Carefully slide the quesadilla into the skillet and cook for 3-4 minutes until golden and crispy.
  8. Flip the quesadilla over and cook for another 3-4 minutes until golden brown.
  9. Transfer to a cutting board, let sit for a minute, then cut into wedges.

Notes

Serve with dipping sauces like marinara, ranch dressing, or guacamole.
