Mediterranean Bowl with Beef Meatballs

A vibrant Mediterranean Bowl filled with succulent beef meatballs, herbed couscous or quinoa, fresh veggies, and a drizzle of creamy tzatziki.

  • 1 lb Ground Beef
  • 3 cloves Garlic, minced
  • 1 small Onion, finely chopped
  • ¼ cup Parsley, chopped
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 large Egg
  • ½ cup Breadcrumbs
  • Salt & Pepper, to taste
  • 2 cups Cooked Couscous or Quinoa
  • 1 cup Cherry Tomatoes, halved
  • 1 medium Cucumber, diced
  • ½ cup Feta Cheese, crumbed
  • ½ cup Tzatziki Sauce
  • Olive Oil, drizzle for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix in a large mixing bowl, the ground beef, minced garlic, chopped onion, parsley, cumin, paprika, egg, breadcrumbs, salt, and pepper.
  3. Form the mixture into small balls, about the size of a golf ball.
  4. Bake the meatballs in the preheated oven for about 20 minutes, or until browned and cooked through.
  5. Prepare your couscous or quinoa according to package instructions.
  6. Chop your cucumbers, halve the cherry tomatoes, and crumble the feta.
  7. Plate by scooping a portion of couscous or quinoa into a bowl, adding meatballs, diced cucumbers, cherry tomatoes, and crumbled feta.
  8. Drizzle with tzatziki sauce and olive oil for flavor.

Notes

For a flavorful twist, consider adding fresh herbs like mint or dill to the meatballs, or spices like crushed red pepper flakes for heat.
