Mediterranean Lentil Salad

A vibrant tapestry of colors, textures, and flavors in a healthy lentil salad that transports you straight to the Mediterranean.

Ingredients

  • 1 cup lentils
  • 2 cups water or vegetable broth
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water to remove any dirt or impurities and place them in a saucepan.
  2. Add the water or broth and bring it to a boil over medium-high heat.
  3. Reduce the heat to low, cover, and let the lentils simmer for 20-25 minutes until tender but still holds their shape.
  4. Chop the cucumber, bell pepper, cherry tomatoes, red onion, and parsley and place in a large bowl.
  5. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl to make the dressing.
  6. Combine the lentils with the chopped veggies and drizzle in the dressing. Toss until well combined.
  7. Let it sit for 10-15 minutes to allow flavors to meld.
  8. Taste and adjust seasoning as necessary before serving.
  9. Serve in bowls or on a platter with extra parsley for garnish.

Notes

This salad can be made ahead of time and tastes even better the next day. Keep the dressing separate until ready to serve.
