A flavorful Mediterranean Steak Bowl featuring tender marinated steak over a bed of vibrant vegetables and zesty tzatziki sauce.

  • 1 lb flank steak
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 2 cups cooked quinoa (or brown rice)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon dill or mint, chopped
  • Salt and pepper, to taste

Instructions

  1. Marinate the steak by whisking together olive oil, minced garlic, lemon juice, salt, and pepper in a bowl. Add the flank steak and coat thoroughly. Marinate in the fridge for at least 30 minutes.
  2. Cook quinoa according to package instructions, using vegetable broth for extra flavor if desired. Fluff with a fork and set aside.
  3. Grill the marinated steak on medium-high heat, about 3-4 minutes per side for medium-rare. Let it rest for 5 minutes before slicing.
  4. Mix together Greek yogurt, grated cucumber, minced garlic, dill, and a pinch of salt and pepper for the tzatziki sauce.
  5. Assemble the bowl by layering quinoa, grilled steak, cherry tomatoes, cucumbers, red onion, and olives. Drizzle with tzatziki sauce.
  6. Enjoy immediately while fresh and vibrant!
