  • 1/4 cup hot honey
  • 4 slices bacon (or turkey/mushroom bacon)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Wash the potatoes thoroughly and cut them into bite-sized pieces, about 1.5 inches.
  2. Boil a pot of salted water and add the chopped potatoes. Boil for about 8-10 minutes until fork-tender.
  3. Drain the potatoes and spread them on a baking sheet. Let them dry for a few minutes.
  4. Drizzle olive oil over the potatoes and sprinkle with salt and pepper. Toss until evenly coated.
  5. Roast in the oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  6. Fry the bacon until crispy, then crumble it over the roasted potatoes.
  7. Drizzle hot honey over the potatoes and garnish with parsley or green onions before serving.
