Chicken Burrito Bowl

A vibrant and satisfying meal featuring chicken, rice, corn, and beans, topped with fresh cilantro and lime.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breast
  • 1 cup white rice (or brown rice/quinoa)
  • 1 cup sweet corn (fresh, frozen, or canned)
  • 1 cup black beans (or pinto beans/lentils)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup fresh cilantro (chopped)
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Prepare the rice: Cook according to package instructions. For white rice, boil 2 cups of water, add salt, stir in rice, cover, and reduce heat for 18-20 minutes.
  2. Cook the chicken: Dice chicken into bite-sized pieces. Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, cumin, and chili powder. Sauté until golden brown, about 6-8 minutes.
  3. Sauté the aromatics: Remove chicken and add chopped onion to the skillet. Sauté until softened, about 3-4 minutes. Add minced garlic for the last minute.
  4. Combine ingredients: Stir in diced tomatoes, corn, and black beans. Cook for 5 minutes until warmed through.
  5. Add chicken back: Return chicken to skillet and pour in lime juice. Toss gently to mix and warm through.
  6. Assemble your bowls: Layer rice in bowls, top with chicken mixture, and garnish with fresh cilantro and lime wedges.
