Cottage Cheese Alfredo Pasta

A creamy, nostalgic twist on classic fettuccine Alfredo, using cottage cheese for a lighter, protein-rich sauce.

Ingredients

  • Pasta (of your choice)
  • Cottage Cheese
  • Parmesan Cheese
  • Garlic
  • Butter
  • Salt
  • Pepper

Instructions

  1. Cook the Pasta: Begin by boiling a large pot of salted water. Add your pasta and cook according to package instructions for al dente perfection, about 8-10 minutes, then drain.
  2. Sauté the Garlic: In a large skillet, melt 2 tablespoons of butter over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Prepare the Sauce: In a bowl, combine 1 cup of cottage cheese with ½ cup of Parmesan, a pinch of salt, and pepper to taste. Blend if a smoother sauce is desired.
  4. Combine Pasta and Sauce: Add the drained pasta to the skillet with garlic butter. Pour the cottage cheese sauce and splash of reserved pasta water, stirring over low heat for 1-2 minutes.
  5. Serve It Up!: Transfer to a serving bowl, top with additional Parmesan and black pepper, and garnish with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of water or milk.
