Dill Pickle Bacon Pasta Salad

A vibrant pasta salad combining tangy flavors, crispy textures, and creamy goodness, perfect for gatherings.

Ingredients

  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/4 cup Pickle Brine
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Sugar
  • 8 slices Bacon
  • 8 ounces Short Pasta
  • 1 cup Pickles
  • 1 cup Mini Cucumbers
  • 1 cup Mild Cheese
  • 1/2 cup Red Onions
  • 1/4 cup Fresh Dill
  • Salt and Pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil, and add your short pasta. Cook according to the package instructions until al dente. Drain and toss with a drizzle of olive oil.
  2. Cook the bacon in a skillet over medium heat until crispy and let it cool. Chop into bite-sized pieces.
  3. Combine the mayonnaise, sour cream, pickle brine, yellow mustard, kosher salt, and sugar in a large mixing bowl and whisk until smooth.
  4. Add cooled pasta, crispy bacon, pickles, mini cucumbers, cheese, red onions, and fresh dill to the bowl. Gently toss to coat.
  5. Taste and adjust seasoning as needed with salt or sugar.
  6. Cover and refrigerate the salad for at least 30 minutes before serving.

Notes

Perfect for potlucks and gatherings. Consider adding fresh dill as a garnish before serving.
