French Onion Grilled Cheese

A delightful twist on the classic grilled cheese, combining caramelized onions, gooey Gruyère cheese, and toasted bread.

Ingredients

Scale
  • 3 large onions
  • 4 tbsp unsalted butter
  • 1 cup beef or vegetable broth
  • 1 cup Gruyère cheese, shredded
  • 8 slices of crusty bread (like sourdough or French baguette)
  • Salt and pepper to taste
  • Optional: fresh thyme or parsley

Instructions

  1. Start by slicing your onions thinly. In a large skillet, melt 3 tablespoons of butter over medium heat. Add the sliced onions along with a pinch of salt. Stir occasionally, allowing the onions to slowly caramelize for about 25-30 minutes.
  2. Once the onions are golden brown, add your broth to the pan. Increase the heat to medium-high to let it simmer for a few minutes until it thickens slightly. Season with salt and pepper.
  3. While the onions are simmering, take your bread slices and butter one side of each.
  4. In a non-stick skillet over medium heat, place two slices of the bread, buttered side down. Add caramelized onion mixture on top, sprinkle with Gruyère cheese, and finish with a second slice of bread, buttered side up.
  5. Cook for about 3-4 minutes on each side or until the bread is golden and the cheese is melted.
  6. Once done, remove the sandwiches from the skillet and let them rest for a minute before slicing in half.

Notes

Feel free to add herbs or other ingredients to personalize your sandwich. Patience is key when caramelizing the onions.
