Ingredients
Scale
500g Chicken Breast
2 tablespoons Olive Oil
2 tablespoons Taco Seasoning
1 cup Rice (uncooked)
1 can Canned Black Beans (drained and rinsed)
1 cup Fresh Salsa
1 cup Corn
1 ripe Avocado
1 cup Cheddar Cheese (shredded)
Lime Wedges
Instructions
Start by dicing your chicken breast into bite-sized pieces. In a bowl, combine the chicken with olive oil and taco seasoning, ensuring each piece is well coated.
While your chicken is soaking in the flavors, cook the rice according to the package instructions.
Add a little more olive oil in a hot skillet over medium heat, then toss in the marinated chicken. Cook for about 5-7 minutes or until thoroughly cooked.
In another pan, combine the black beans and corn, cooking them over medium heat for 3-4 minutes until warmed through.
Now comes the fun part! In individual bowls, start with a generous scoop of rice, then top with chicken, black beans, corn, salsa, diced avocado, and shredded cheese. Serve with lime wedges.
