Irish Potato Candy

Delightful, creamy treats resembling potatoes, rolled in chocolate sprinkles or cocoa powder—perfect for any occasion!

Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 4 cups powdered sugar, sifted
  • 1 cup shredded coconut
  • 1 teaspoon cinnamon
  • Chocolate sprinkles or cocoa powder for coating

Instructions

  1. Prepare your workspace: Start by clearing your counter and gathering all the ingredients and tools you’ll need, including a mixing bowl, spatula, and baking sheet lined with parchment paper.
  2. Cream the butter and cream cheese: In your mixing bowl, combine the softened butter and cream cheese. Using an electric mixer, beat them until creamy and smooth, about 2-3 minutes.
  3. Add sugar and coconut: Gradually add the sifted powdered sugar into the butter mixture. Start on low speed, then increase and mix until well combined. Fold in the shredded coconut and cinnamon.
  4. Form the candies: Scoop out about a tablespoon of the mixture and roll it into an oval shape. Place on the lined baking sheet.
  5. Chill: Refrigerate the formed candies for about 30 minutes to firm up.
  6. Coat the candies: Roll each candy in chocolate sprinkles or sift cocoa powder on top for coating.
  7. Plate and enjoy: Once coated, place them back on the parchment paper to set completely, or arrange in cupcake liners for a festive presentation.

Notes

These candies can last in the fridge for about one week or freeze wrapped individually for up to three months. Consider adding toppings like flaky sea salt for a gourmet touch.
