Loaded BBQ Potato Bowls

A comforting recipe featuring fluffy baked potatoes piled high with juicy BBQ chicken, melted cheddar, creamy sour cream, and fresh green onions.

  • 4 russet potatoes
  • 2 cups shredded BBQ chicken
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced
  • Olive oil
  • Salt, to taste
  • 1/2 cup BBQ sauce (or more to taste)

Instructions

  1. Preheat your oven to 425°F (220°C). Scrub the potatoes and poke holes in them with a fork. Rub with olive oil and sprinkle with salt.
  2. Place the potatoes on the oven rack or a baking sheet and bake for 45-60 minutes until tender.
  3. While the potatoes are baking, shred the BBQ chicken and mix in your favorite BBQ sauce.
  4. Once the potatoes are baked, slice them open, fluff the insides, and top with the BBQ chicken and cheddar cheese.
  5. Broil the loaded potatoes for a few minutes until the cheese melts.
  6. Add sour cream and green onions on top and serve immediately.

Notes

These bowls can be customized with additional toppings like jalapeños or substitute the chicken with grilled veggies for a vegetarian option.
