Cottage Cheese Chicken Alfredo Bake

A comforting and creamy pasta bake featuring chicken, cottage cheese, and a delicious Alfredo sauce, perfect for warming up on chilly evenings.

  • 2 boneless, skinless chicken breasts or thighs
  • 8 oz penne or rotini pasta
  • 1 cup cottage cheese
  • 2 cups Alfredo sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: Fresh herbs for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta in a large pot of salted boiling water until al dente, about 7-9 minutes. Drain and set aside.
  3. Prepare the chicken: season it with salt and pepper, then grill or sauté until fully cooked. Shred or dice the chicken into bite-sized pieces.
  4. Mix the cottage cheese, half of the mozzarella, half of the Parmesan, and Alfredo sauce in a separate bowl until well blended.
  5. Combine the cooked pasta, chicken, and cheesy mixture in a large bowl, tossing gently to coat.
  6. Transfer the mixture to a greased 9×13 baking dish and spread it evenly.
  7. Top with remaining mozzarella and Parmesan cheese.
  8. Bake for 25-30 minutes until cheese is bubbly and golden.
  9. Cool for 5-10 minutes before serving.

Notes

For a healthier twist, use whole wheat pasta. You can also add sautéed vegetables for extra nutrition.
