Dump-and-Bake Greek Chicken

A flavorful and easy Mediterranean dish featuring juicy chicken thighs, fresh vegetables, and creamy feta cheese, all baked in one dish.

  • 2 lbs chicken thighs
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 1/2 cup crumbled feta
  • 2 tbsp olive oil
  • 2 tsp oregano

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grab a large baking dish and drizzle in about a tablespoon of olive oil.
  3. Lay the chicken thighs in the baking dish, ensuring they’re spread out evenly, and season with salt, pepper, and one teaspoon of oregano.
  4. Surround the chicken with sliced zucchini, red onion, and cherry tomatoes.
  5. Crumble the feta cheese over the veggies and chicken.
  6. Pour the remaining olive oil over the top and finish with the remaining teaspoon of oregano.
  7. Place the baking dish in the oven and bake for about 35-45 minutes.
  8. Once cooked, let it rest for 5 minutes before serving.

Notes

Serve with fluffy quinoa or warm, crusty bread to soak up the juices. Add fresh parsley for a pop of color.
