Homemade Chinese Shrimp Fried Rice

A quick and easy homemade shrimp fried rice that brings the soul of Chinese cuisine right to your kitchen.

  • 1 cup shrimp, peeled and deveined
  • 2 eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Start by gathering all your ingredients.
  2. Heat the wok: Place a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and allow it to get hot.
  3. Cook the shrimp: Toss the shrimp into the hot oil, seasoning lightly with salt and pepper. Stir-fry for about 2-3 minutes until they turn pink and opaque.
  4. Scramble the eggs: Add another tablespoon of vegetable oil to the pan. Pour in the beaten eggs and give them a swirl. Cook for about 1-2 minutes until fluffy.
  5. Sauté the veggies: Into the same pan, add another drizzle of oil if needed, then toss in your mixed vegetables. Stir-fry for about 3-4 minutes until they’re tender.
  6. Combine everything: Pour the cooked rice into the pan, along with the shrimp and scrambled eggs. Drizzle with soy sauce and toss everything together.
  7. Final touches: Stir in the chopped green onions, and adjust the seasoning as necessary.
  8. Serve it up: Once everything is heated through and combined, it’s ready to serve!

Notes

Fried rice can be served in lettuce leaves or a scoopable bowl with sesame seeds and lime wedges for presentation.
