A vibrant and delicious salad featuring roasted beets, creamy goat cheese, peppery arugula, and toasted walnuts.

Ingredients

Scale
  • 3 medium-sized fresh beets
  • 100 grams of creamy goat cheese
  • 4 cups of fresh arugula
  • ½ cup of toasted walnuts
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the beets under cold water and trim the tops, leaving the tails intact.
  3. Wrap each beet in aluminum foil.
  4. Place the foil-wrapped beets on a baking sheet and roast for 45-60 minutes.
  5. Toast the walnuts in a dry skillet over medium heat for about 5 minutes.
  6. Wash the arugula and spin dry; place in a bowl and drizzle with olive oil.
  7. Whisk together the remaining olive oil and balsamic vinegar in a small bowl, seasoning to taste.
  8. Once roasted, unwrap the beets and let them cool slightly before rubbing off the skins and slicing.
  9. Assemble the salad by placing arugula on a platter, adding the sliced beets, crumbling goat cheese, walnuts, and drizzling dressing over the top.
  10. Serve slightly warm or at room temperature.
