  • 1 lb ground beef (or substitute with turkey, chicken, or plant-based alternatives)
  • 2 cups cheddar cheese (or mix with Monterey Jack or Cotija)
  • 2 tablespoons taco seasoning
  • 2 cups tortilla chips (or gluten-free options)
  • 1 cup sour cream (or plain coconut yogurt for dairy-free)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet over medium heat until browned, about 5-7 minutes.
  3. Add taco seasoning and a splash of water, and stir to combine.
  4. Mix in the corn, stirring until heated through.
  5. Layer tortilla chips, half the beef mixture, and cheese in a greased 9×13 baking dish. Repeat layers.
  6. Bake for 25-30 minutes until cheese is melted and bubbly.
  7. Let rest for about 10 minutes, then top with sour cream and cilantro if desired.
