Peach Lemon Meringue Parfaits

  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 34 ripe peaches, chopped
  • 4 egg whites
  • 1 cup granulated sugar (for meringue)
  • 1 teaspoon cornstarch (for meringue)
  • 1 teaspoon lemon juice (for meringue)

Instructions

  1. Prepare the Lemon Curd: In a saucepan over medium heat, whisk together lemon juice, sugar, and cornstarch until smooth. Stir constantly until thickened (about 8-10 minutes). Remove from heat, then whisk in egg yolks and vanilla extract. Let cool.
  2. Chop the peaches into bite-sized pieces and toss with lemon juice.
  3. Beat the egg whites until soft peaks form. Gradually add sugar, beating until stiff peaks form (about 5-7 minutes).
  4. Fold in cornstarch and lemon juice.
  5. Layer the parfait: Start with lemon curd, then peaches, and finally meringue. Repeat layers and finish with meringue.
  6. Broil the assembled parfaits for 2-3 minutes for toasted meringue, if desired.
  7. Refrigerate for at least an hour before serving.

Notes

For extra flavor, garnish with a mint leaf or lemon zest before serving. These parfaits can be stored in the fridge for up to 2 days.
