Peach Shortcake Ice Cream Sandwiches

Delightful ice cream sandwiches made with fluffy biscuits and creamy peach ice cream, perfect for summer.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1/4 cup cold butter, cut into small pieces
  • 3/4 cup milk
  • Peach ice cream
  • Fresh peaches (for garnish)
  • Whipped cream (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the flour, baking powder, and salt in a mixing bowl.
  3. Work the butter into the flour until it resembles coarse crumbs.
  4. Add the milk slowly until a soft dough forms.
  5. Knead the dough gently and roll it out to about 1 inch thick.
  6. Cut out biscuits using a round cutter.
  7. Bake for 12-15 minutes until golden brown.
  8. Cool the biscuits on a wire rack.
  9. Assemble by scoop peach ice cream onto one biscuit, adding peaches or whipped cream if desired.
  10. Top with another biscuit and repeat for all.
  11. Freeze for at least 30 minutes to set.
  12. Serve and enjoy!
