  • 8 oz Cream Cheese, room temperature
  • 1/2 cup Sweetener of choice (honey, agave, or stevia)
  • 1 tsp Vanilla Extract
  • 2 shots Espresso
  • 1/2 cup Toffee bits
  • 1 cup Crushed graham crackers or almond flour (optional, for crust)

Instructions

  1. Prepare the Creamy Base: Combine the cream cheese and Greek yogurt in a mixing bowl. Mix with an electric mixer until fluffy and smooth.
  2. Sweeten the Deal: Add in your sweetener of choice and the vanilla extract. Continue mixing until well combined.
  3. Brew Up Some Flavor: Prepare your espresso. While it’s still warm, mix it into the cheese mixture.
  4. Fold in the Toffee: Carefully fold in the toffee bits, preserving their delightful crunch.
  5. Chill Out: Pour the mixture into your prepared crust (if using) and refrigerate for at least 240 minutes.

Notes

For a dairy-free option, use coconut cream instead of cream cheese and Greek yogurt. For an extra touch, drizzle some caramel syrup on top.
