No Yeast Cheddar Zucchini Bread

A delightful, quick, and easy recipe for Cheddar Zucchini Bread that doesn’t require any yeast.

Ingredients

  • 2 cups grated zucchini
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • ¼ cup olive oil
  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. Combine the dry ingredients in a mixing bowl.
  4. Whisk the wet ingredients together in another bowl.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the grated zucchini.
  7. Grease a loaf pan and pour in the batter.
  8. Bake for 45-55 minutes until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a healthier twist, substitute half of the all-purpose flour with whole wheat flour.
